Blueberries. Yes, Blueberries.

While my next batch of Project Green Machine is waiting to be built, I’ve been brainstorming on a third sauce to add to the rotation. My overall production goal is to start a new sauce each week. With my current sauce formula, each sauce takes approximately one month to reach maturity. A months’ wait means I’ve got to get a sauce type plan in place and keep a steady rotation schedule. By doing this, I’ll be able to feature a new sauce each week with availabilities occurring at least once a month.
I originally had thought I would do something like a Mango or a Pineapple sauce to extend my collection. When the Blackberry sauce refused to turn purple, it got me thinking on possible alternatives. Because of that, I’ve decided to postpone the Mango and Pineapple sauces to pursue a more immediate purple sauce. I’m hoping that Blueberries hold the key to achieving that color!

Color isn’t the only goal though. If it was, I’d just add food coloring to get what I wanted. Great taste and balancing heat are the most important factors approaching the sauce. While I could just attempt to swap the Blackberries for Blueberries, I also want to give those pepper heads something a little different. Rather than the Habaneros I am using from my Blackberry sauce, I decided to bring the heat even more! If Ghost Peppers immediately came to mind then your head is in the right place!

As soon as the pepper is available from local markets we will begin Project Blueberry Jolokia! The aim is to have a purple pepper sauce that has great sweet tastes of Blueberries and brings the heat the Ghost Pepper is known for. There will be plenty of pictures to come showing off the progress of the project!
